Labra with 18 vegetables | ভোগের লাবড়া | Mixed Vegetable Curry Recipe in Bengali style Labra is Bengali mixed vegetable curry generally prepared during Durga puja, Lakshmi puja, Saraswati puja and any other puja occasions. It is served with bhoger khichuri. Ingredients Seem (Broad Bean), Potol (Pointed Gourd), Gatti Kochu (Taro Root), Dheros/ bhindi (Lady’s Finger),Mula (Radish), Barboti (Yard Long Beans), Green Papaya, Pumpkin, Potato, Kakrol (Spiny/ Teasle Gourd), Brinjal, Jhinge (Ridge Gourd), Ranga Aloo (Sweet Potato), Sojne Data (Drum Stick), Carrot, Chopped Leaves Radish - 1 bowl Chopped Stem of Banana, Banana Flower, Green Banana, For tempering – Bay Leave (few), Dry Red Chilli (2piece), Panch Foran (1tsp), Mustard Seed (1tsp), Cardamom (5piece), For Dry Roasted Mashala – Panch Foran (1tsp), Mustard Seed (1tsp), Dry Red Chilli (1piece) Sugar – 2 tsp Ginger Paste – 2 tsp Salt – As per taste Red Chilli – 8-9 piece Turmeric Powder – 1tsp Grated Coconut – 1 bowl Daler Bori (Lentil Dumplings) - 1 bowl Coconut Water – 1 glass Refined Oil – 5 tbsp Method Pour 4 tbsp oil, Oil is heated, For tempering, add bay leaves, dry red chilli, mustard seed, panch foran, Aroma of spices is coming out Add Ginger Paste, little bit of Salt, grated Coconut Fry the coconut very well, Add chopped banana stem, Fry it for 1 minute Add Kakrol (Spiny/ Teasle Gourd) & Carrot, Fry it for 1 minute Add Radish, Taro Root & Papaya, Mix it well Add Banana Flower, Green Banana & Leaves of Radish, Drum Stick, Potato & Sweet Potato Mix it well on high flame, Add Sugar, Salt, Mix it well Add Pumpkin & Pointed Gourd, Mix it well Add Broad Bean, Yard Long Bean, Lady’s Finger & Ridge Gourd, Mix it well Pour Coconut water, Add grated Coconut, Chilli, Cardamom, Cover the pan, keep on another oven For dry roasted mashala, add dry red chilli, panch foran & mustard seed Tossed Bori with turmeric powder & salt, Pour 1 tbsp oil Sprinkle water over Bori (Lentil Dumplings), Fry the Bori Brinjal pieces are marinated with turmeric & salt Remove fried bori from the pan, Fry the marinated brinjal Grind the dry roasted mashala with Wooden Hand Grinder into half dust form Add fried brinjal to the curry & also some fried bori Cover the pan & cook for 5 minutes Add Ghee & dry roasted half dust mashala Cover the pan & switch off the flame Spread fried crushed bori & grated coconut over the curry for garnishing Spread again ghee over the top layer of curry Now ‘LABRA’ is ready, It is served with khichuri Keep healthy & be happy Bulu’s View
