I made ‪@Chantymarie‬ ‘s Erewhon dupe cinnamon roll recipe, but with a twist: I used my NutriBullet and made them mini. These little rolls are the perfect size for a satisfying snack without going overboard. They’re bite-sized, no-bake cinnamon rolls that are packed with wholesome ingredients, just the right amount of sweetness & spice. 🧑‍🍳 INGREDIENTS: ‪@Chantymarie‬ Recipe For the Dough: • 1/4 cup psyllium husk • 2/3 cup water • 2 cups organic rolled oats • 1/2 cup pecans •1/4 cup maple syrup • 2 tsp vanilla extract (or paste) • A dash of salt For the Filling: • 10 large pitted dates • 1/2 cup pecans (+ extra for sprinkling) • 1/4 cup water • 3.5 tsp Ceylon cinnamon (use 1-2 tsp if using regular cinnamon to avoid overpowering flavor) • 1 tsp vanilla extract • A dash of salt 🍴 INSTRUCTIONS: Soak the psyllium husk: In a small bowl, mix the psyllium husk with 2/3 cup of water and stir. Let it sit for 5-10 minutes to thicken up. Prepare the dough: In your NutriBullet (or high-powered blender), blend the rolled oats until they turn into a fine flour. Add the pecans and blend for another 10 seconds until you have a fine powder — don’t overblend or you'll make pecan butter! Form the dough: Add the oat-pecan flour to a food processor with the soaked psyllium husk, maple syrup, vanilla, and a pinch of salt. Blend for about 15 seconds until a dough ball forms. Roll out the dough: Transfer the dough to a surface and gently roll it between two sheets of parchment paper into a rectangle about 1/2 inch thick. Make the filling: In the food processor, blend the pitted dates until they form a sticky ball. Add the pecans and pulse to crush them into small pieces. Add the cinnamon, vanilla, and water and blend until smooth. Tip: If using a NutriBullet, you’ll need to stop and mix the filling a bit to help it come together, and don’t forget to add the extra water to get the right consistency.
