Old Fashion Sunday Pot Roast #OldCountryCooks Ingredients: 2.5 Lbs Beef Shoulder 2 ea Russet Potato, 1 inch diced 3 ea Celery Stalks, Sliced 1 ea Bell Pepper large, cut into strips 1 ea Onion, large diced 1 cn Diced Tomatoes 3 Tbsp Olive Oil 1 pkg Au Jus Seasoning Mix 3 cups Water 1.5 Tbsp Cornstarch 3 Tbsp Cold Water Salt & Pepper to taste Instructions: Lightly grease the roast with olive oil and season with salt and pepper. In a In a 4.5 quart stock pot add about 3 tbsp of olive oil and bring the temp. to medium-high heat. Once hot brown roast off on all sides. Mix the 3 cups of water with the au jus seasoning mix. Mix well and pour into to the pot with the roast. Cove with a lid and bring to a low simmer. Simmer for 1 hour. Then add the potatoes and the celery. Cover and bring back to a simmer and cook for 1.5 hours. Then add the onions, peppers, and tomatoes with the juice. Cove and bring to a simmer and cook for 30 minutes. Remove the roast. Mix the cornstarch and the cold water together and mix well. Stir the mixture into the stock pot with the broth and vegetables. Mix well. Slice roast and serve with the broth and mixed vegetables.
