𝐁𝐚𝐤𝐞𝐝 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐁𝐫𝐞𝐚𝐬𝐭 𝐏𝐫𝐞𝐩 𝐭𝐢𝐦𝐞: 30 mins 𝐂𝐨𝐨𝐤𝐢𝐧𝐠 𝐓𝐢𝐦𝐞: 25 mins 𝐒𝐞𝐫𝐯𝐢𝐧𝐠𝐬: 4 portions 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: • 4 chicken breasts • 2 tsp olive oil 𝐒𝐞𝐚𝐬𝐨𝐧𝐢𝐧𝐠: • 1 tsp dried oregano/thyme • ¼ tsp garlic powder • ½ tsp each salt & pepper • 1½ tbsp brown sugar • 1 tsp paprika 𝐆𝐚𝐫𝐧𝐢𝐬𝐡: • Parsley, finely chopped • 1 roll butter paper 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧: 1. Preheat oven to 200 °C on convection mode. 2. Pound chicken to 0.6" at the thickest part using a meat mallet. This helps making chicken more tender. 3. Mix seasoning ingredients and keep aside. 4. Line tray with butter paper. Place chicken upside down on tray. Drizzle chicken with about 1 tsp oil. Rub over with fingers and sprinkle with seasoning. 5. Flip chicken. Drizzle with 1 tsp oil, rub with fingers and sprinkle with seasoning, covering as much of the surface area as you can. 6. Bake for 25 mins at 180°C or until surface is golden. Remove from oven and immediately transfer chicken to serving plates. 7. Garnish with freshly chopped parsley and serve with mashed potatoes and glazed carrots.
