I Got a Summer tomato salad recipe made super easy. Sweetness full of bursting flavors. Perfect salad to pass around the table! 🍅 bringing vibrant colors and also adding a complexity taste from the different tomatoes. HEIRLOOM tomatoes are the perfect summer treat! Sweet and tasty adding the perfect flavor combination to your dish! with added fresh basil, Cojita Mexican cheese and a sweet/tangy balsamic glaze drizzled over ! Ingredients ♡ 2cups of Balsamic Vinegar (use good quality) 4-5 Heirloom tomatoes Salt Pepper Extra virgin oil or Avocado oil 1/2 cup Cojita cheese Fresh basil for GARNISH 🌿 Instructions Pour the vinegar into a small saucepan and bring to a boil over medium-high heat. Reduce the heat to medium and simmer, stirring occasionally, until the vinegar thickens, coats the back of a spoon, and is reduced to about 1/2 cup, 20 to 25 minutes. Set aside to cool for 10 minutes — the glaze will thicken slightly as it cools. Carefully slice your Heirloom tomatoes and set aside. Grab a large plating you're going to use to assort the different tomatoes. Layer each different color tomato to create a contrast to your plate, add fresh basil in between for a touch of freshness. Drizzle over some extra virgin olive oil or some Avocado oil. Pink salt 🧂 and crush black pepper for taste. Crumble over some fresh Mexican cojita cheese. Drizzle over your Balsamic glaze.
