RED VELVET CUPCAKES: • 1 cup all-purpose flour • 1 cup granulated sugar • 3 tbsp cornstarch • 1 tablespoons unsweetened cocoa powder • 1 teaspoons baking soda • 1/2 teaspoon baking powder • 1/2 teaspoon salt • 2 large eggs • 1/2 cup buttermilk • 1/4 cup warm water • 1/3 cup vegetable oil • 1 tbsp vanilla extract • 2 tablespoons red food colour Cream Cheese Frosting: Cream Cheese - 8 oz (or) 228 g Unsalted Butter - 4 oz (or) 118 g Powdered Sugar - 2 Cups Vanilla extract -1 tbsp Whipped Cream - 1 Cup Instructions RED VELVET CUPCAKES 1. Preheat oven to 350 degrees. Line a muffin tin with cupcake liners. Recipe makes 12 cupcakes. 2. In a mixing bowl, stir together flour, cornstarch, cocoa, baking soda, baking powder, and salt. 3. In another mixing bowl Add eggs, buttermilk, warm water, oil, vanilla, Sugar mix everything until together and add dry ingredients and red food coloring. Use a Whisk or Spatula to beat until smooth. Scrape the sides and bottom of the mixing bowl to make sure everything got mixed in. 4. Fill each cupcake liner with 1/4 cup full. 5. Bake for 20-25 minutes until the cupcakes meet the toothpick test (stick a toothpick in and it comes out clean) it is done. Cream Cheese Frosting: In a large bowl, use a hand mixer to whip Cream Cheese and butter until light and fluffy, about 2 minutes. Add in vanilla extract and powdered sugar and whip again about 3 more minutes and finally add whipped cream and whip few more minutes until it is thick and creamy, after keep in the freezer for 20 minutes to thicken the cream and pipe on the top of cupcakes.
