Shahi Mutton Korma(Goat curry), it's Time to give a treat to your Taste buds.The Aromatic & Flavourful recipe with a Unique taste makes it different from others. ----------------- Mutton - 1/2 Kg STEP 1: MUTTON MARINATION SPICES TO BE ADDED AFTER ROASTING AND GRINDING --------------------------------- Black pepper - 1 teaspoon Cloves - 5 Cardamom - 6 Cinnamon - 2 sticks Mace - 1 piece Seeds of 2 black cardamom Roast, grind and add to the mutton pieces Red chilli powder - 1 tablespoon Coriander powder - 2 tablespoon Lemon juice - 2 tablespoon or half lemon Salt - 1 tablespoon Turmeric powder - 1/2 teaspoon Ginger garlic paste - 2 tablespoon + 2 fresh red chillies + few coriander leaves ADD ALL THESE TO MUTTON AND MARINATE FOR 30 MINUTES MINIMUM (overnight marination for best results) STEP 2: FOR SHAHI KORMA GRAVY PREPARATION ---------------------------------------- Cashewnuts - 20 Almonds without skin - 20 Poppy seeds - 2 tablespoon Charoli - 2 tablespoon leave in hot water for 10 mins for easy grinding Fry 3 medium sized onions in ghee (preferable) until golden brown NOW GRIND THE NUT MIXTURE + FRIED ONIONS + YOGURT - 200 gram = Make a paste STEP 3: COOKING -------------------------------- 1.In a pan add GHEE/olive oil - 5 tablespoon 2.Add the mutton pieces and fry for 15 minutes. 3.Then add half a cup of water and cook till mutton is tender. (15 mins in an instant pot) 4.Now add the ground nut onion and yogurt paste. 6.Mix all these well and cook under high flame. ( sautee 15 mins) 7.When it boils, low the flame and close lid and let it rest for 10 minutes under low flame. 9.Open lid and add coriander leaves 10.Tasty shahi mutton korma is ready.
