Ingredients: • Sweet potato (shakarkandi) – 3 medium, washed & peeled • Ghee / groundnut oil – for shallow frying • Sendha namak – as per taste • Black pepper powder – ½ tsp • Roasted cumin powder – ½ tsp • Lemon juice – 1 tsp • Fresh coriander – chopped • Green chilies – finely chopped • Pomegranate pearls – 2 tbsp For Toppings/Chutneys: • Meethi dahi – whisked curd with a little sugar/mishri • Green chutney (vrat style) – coriander, green chili, rock salt, lemon juice • Meethi chutney (vrat style) – dates + raisins blended into a thick paste ⸻ 🔪 Method: 1. Prepare Sweet Potatoes • Peel and slice sweet potatoes into ½ inch thick rounds. • Heat ghee in a pan and shallow fry slices till lightly golden from both sides. • Remove and gently press each slice with a potato masher to flatten (like tuk). • Place them back in the pan, shallow fry again till golden brown & crisp. 2. Seasoning • Take hot tuk in a bowl. • Add sendha namak, black pepper, roasted cumin powder, lemon juice. • Toss well so seasoning coats each piece. 3. Assemble Chaat • Arrange tuk pieces on a serving plate. • Drizzle meethi dahi, green chutney, and vrat-friendly meethi chutney. • Sprinkle chopped coriander, green chilies, and pomegranate pearls. 4. Serve • Serve immediately while crisp and enjoy the perfect vrat wali chaat.
