This is our version of Vegan Chicken Pot Pie. It uses Violife Smoked Provolone and Feta Cheese, Sweet Earth Plant Based Chicken, Wholly Gluten Free Vegan pie shell and Schar puff pastry. Ingredients: 1 Wholly Gluten Free Vegan Pie Shell 1 roll Schar puff pastry 1 package Sweet Earth Plant Based Chicken Violife Feta Cheese Violife Smoke Provolone cheese 1 small onion diced 1 small partially cooked potato 1 package frozen peas and carrots 1/2 can sweet corn 2 stalks chopped celery (optional) 1 tablespoon oil Heat pan to with 1/2 tbs oil set to medium high and saute onions until translucent. Add 1 package of frozen peas and carrots, the partially cooked potato, 1/2 can of sweet corn, add chopped celery (optional). Pre-heat oven to 350F. Pre bake pie shell for 5 minutes To the pan add the chopped violife smoked provolone and feta cheeses. Let it cook and melt nicely. Add two tablespoons of No Chicken Chicken broth to the pan from Imagine Foods. Sprinkle on Trader Joe's Vegan Chickenless Seasoned salt. Now add the Sweet Earth Mindful Chicken Plant based protein. Add mixture to the pre backed pie shell. Cover with Schar Puff Pastry. We cut these into strips, but you can cover it like a tradional pie. Cook for 25-30 minutes until golden brown.
