Welcome to Chandan Indian Recipes! Today, we will make a completely Halwai style Jaalidar Ghevar – a Sawan and Rakshabandhan special sweet. Ghevar is a traditional Rajasthani dessert enjoyed during Teej, Sawan, and Rakhi. Many people face difficulty in making perfect Ghevar, but with my tips and correct measurements, you can make it easily at home with perfect lattice texture and taste. Ingredients / सामग्री For Ghevar: Ghee (घी) – 1½ cup (hot melted, then cooled) Gram Flour (बेसन) – 1 tbsp Wheat Flour (गेहूं का आटा) – 1 tbsp All-purpose Flour (मैदा) – 1½ cup Cold Water (ठंडा पानी) – as required (fridge cold, not freezer) Milk (दूध) – 1½ cup (chilled) Lemon Juice (नींबू का रस) – ½ tsp Oil (तेल) – for frying For Sugar Syrup: Sugar (चीनी) – 1 cup Water (पानी) – ½ cup Saffron (केसर) – few strands (optional, for flavour and colour) For Rabri: Milk (दूध) – 1 litre Sugar (चीनी) – 1 tbsp Saffron (केसर) – few strands (optional) For Garnishing: Almonds (बादाम) – chopped Pistachios (पिस्ता) – chopped Rose Petals (गुलाब की पंखुड़ियां) – for decoration Method / विधि Step 1 – Preparing the Butter from Ghee Heat Ghee (घी) until melted and hot, then cool it slightly. Add ice cubes and whisk well until ghee turns into soft, light butter. Remove excess water from ice melting. Step 2 – Making the Ghevar Batter Add Gram Flour (बेसन) and Wheat Flour (गेहूं का आटा) to the butter. Mix well. Add All-purpose Flour (मैदा) gradually while mixing with fridge-cold water and chilled milk. Add Lemon Juice (नींबू का रस) and mix. Strain the batter through a sieve to avoid lumps. The batter should be neither too thin nor too thick. Step 3 – Frying the Ghevar Heat oil in a deep kadhai, place a ring mould or press in the centre. Reduce the flame to medium and pour batter from a height in thin streams to form a net pattern. Fry until golden, then remove and drain. Repeat for all Ghevars. Step 4 – Making Rabri Boil Milk (दूध) on medium heat, stir continuously until thick. Add sugar and saffron, mix well. Chill for 30 minutes. Step 5 – Making Sugar Syrup Boil Sugar (चीनी) and water until sticky (1-string consistency). Add saffron for flavour and colour. Step 6 – Assembling the Ghevar Pour sugar syrup over Ghevar and let it soak for 2–4 minutes. Spread chilled rabri over the Ghevar. Garnish with almonds, pistachios, and rose petals.
