Ingredients: Boneless Beef (Beef Boti) - 1 kg (small pcs) Chana dal (yellow split peas) - 1.5 cups (Soak for 1 hour) Onion (Pyaz) - 1 medium (sliced) Garlic paste (Lehsan) - 1 tbsp Ginger paste (Adrak) - 1 tbsp Zeera (Cumin) - 1 tbsp Coriander Seeds (Khushk dhania) - 1 tbsp Dried Red chilli (Sabut laal mirch ) - 15 pcs Cinnamon (Dar chini) - 3 pcs Black peppercorns (Sabut kali mirch) - 1 tsp Black cardamom (Bari elaichi) - 3 pcs Green cardamon (Choti elaichi) - 5 pcs Cloves (Long)- 6-8 pcs Salt (Namak) - 1 tbsp (To taste) Water (Pani) - 2 cups Fresh Ginger (Adrak) - 2 inch pcs Green chilli (Hari mirch) - 4 small Cilantro (Dhania) - 1/2 cup and 1/4 cup (Chopped) Mint (Podina) - 1/2 cup (Chopped) Egg (Anda) - 1 & 1 Red Onion (Pyaz) - 1 medium (Finely chopped) Garam masala powder - 1 tsp Directions: In a large pot add Boneless Beef (Beef Boti) - 1 kg (small pcs) Chana dal (yellow split peas) - 1.5 cups (Soak for 1 hour) Onion (Pyaz) - 1 medium (sliced) Garlic paste (Lehsan) - 1 tbsp Ginger paste (Adrak) - 1 tbsp Zeera (Cumin) - 1 tbsp Coriander Seeds (Khushk dhania) - 1 tbsp Dried Red chilli (Sabut laal mirch ) - 15 pcs Cinnamon (Dar chini) - 3 pcs Black peppercorns (Sabut kali mirch) - 1 tsp Black cardamom (Bari elaichi) - 3 pcs Green cardamon (Choti elaichi) - 5 pcs Cloves (Long)- 6-8 pcs Salt (Namak) - 1 tbsp (To taste) Water (Pani) - 2 cups Turn heat to medium Cover and cook for 30-35 mins (check every 10 mins) Once water dries and meat is tender (turn off heat) Set aside and cool for atleast 15 mins In a food processor Add mixture Fresh Ginger (Adrak) - 2 inch pcs Green chilli (Hari mirch) - 4 small Cilantro (Dhania) - 1/2 cup (Chopped) Mint (Podina) - 1/2 cup (Chopped) Blend into smooth mixture In kebab mixture add Egg (Anda) - 1 Red Onion (Pyaz) - 1 medium (Finely chopped) Cilantro (Dhania) - 1/4 cup (Chopped) Garam masala powder - 1 tsp -Mix well -Apply oil on hands -Make kebabs Oil on medium-low heat Whisk 1 Egg Coat kebab with egg before frying Cook until golden brown - 3-4 mins on each side.
