Garlic cloves (optional) Garlic Prepared bouquet garni, bag of spices Water as required, water 3 tbsp Ghee, ghee Salt to taste, salt to taste 3-4 tbsp Tamarind pulp, tamarind water 1 tsp Jaggery, Jaggery 4 heaped tbsp Prepared masala 1 tsp Black peppercorns, crushed, crushed black pepper 1⁄2 cup Chickpeas water, chole water Prepared tira, prepared tira 2 tbsp fresh Coriander leaves, chopped, coriander leaves For Bouquet garni 3 no. Black cardamom, big cardamom 2 tsp Black peppercorns, peppercorns 1 tbsp Tea leaves 3-4 no. Cloves, Cloves 4 no. dry Kashmiri red chillies, dry Kashmiri red chillies For Masala 3 tbsp Coriander seeds 1⁄2 tbsp Cumin seeds, cumin 3-4 tbsp Black peppercorns 7 no. Black cardamom, big cardamom 8-10 no. Green cardamom, green cardamom 4-5 no. Cloves, Cloves 1 tsp Fennel seeds (optional) Fennel Salt to taste, salt to taste For Gajar Chili Achaar 1 cup Water, water 2 medium Carrots (peeled & cut into batons) Carrots 2 no. Green chillies (less spicy & roughly chopped) Green chillies Salt to taste, salt to taste 1 heaped tbsp Vinegar, vinegar 2 tbsp Jaggery, Jaggery 1 tsp Degi red chili powder, Degi red chili powder 1⁄4 tsp Turmeric powder, turmeric powder 1⁄2 tsp Coriander powder, coriander powder 1 tsp dry Mango powder, Amchoor powder For Ginger Green Chilli Paste 4 inch Ginger (peeled & chopped) Ginger 5 no. Green chillies (less spicy & roughly chopped) Green chillies For Strip 3-4 tbsp Oil, oil 2-3 tbsp Ghee, ghee 1 tsp Cumin seeds, cumin Prepared Ginger Green chilli paste, ginger green chilli paste A pinch of asafoetida, asparagus 2 heaped tbsp Degi red chili powder, Degi red chili powder 200 ml Ghee, ghee For Searing Cover 1 tsp Ghee, ghee 2 no. Kulcha, Kulcha 1 tbsp Prepared tira Other Ingredients 3-4 tbsp Red tamarind (soaked for 1hr) Soaked red tamarind For Garnish Coriander sprig, coriander leaf Green chilli, slit into half, green chili Lemon wedge, lemon slit Process For Cooking Chole ● In a pressure cooker, add soaked chickpeas, turmeric powder, garlic, prepared bouquet garni, water as required, ghee and mix well. ● Cook for 3-4 whistles until well cooked. ● Open the lid, add salt to taste, tamarind pulp, jaggery, prepared masala, crushed black peppercorns, chickpeas water and let it simmer for 10-12 minutes until thickened. ● Finish with prepared strip and fresh coriander leaves. ● Transfer to a serving dish and garnish with coriander sprigs, green chillies and lemon wedge. ● Serve hot with seared culture. For Bouquet Garni ● Take a small piece of muslin cloth, add black cardamom, black peppercorns, tea leaves, cloves, dry kashmiri red chillies and make a potli of it. ● Keep it aside for further use. For Masala ● In a pan, add coriander seeds, cumin seeds, black peppercorns, black cardamom, green cardamom, cloves, fennel seeds, salt to taste and dry roast them until it's aromatic. ● Transfer it to a mixer grinder jar and grind it into a fine powder. ● Keep it aside for further use. For Gajar Chilli Pickles ● In a pan, add water, carrots, green chilli and let it boil for 7-8 minutes. ● Add vinegar, jaggery, degi red chilli powder, turmeric powder, coriander powder, dry mango powder and simmer for 4-5 minutes. ● Transfer to a bowl or cleaned jar and set aside for further use. For Ginger Green Chilli Paste ● In a mortar pestle, add ginger, green chillies and grind to a coarse paste. ● Keep it aside for further use. For Strip ● In a handi, add oil, ghee, once it's hot, add prepared ginger garlic paste, a pinch of asafoetida and cook it for 2-3 minutes. ● Add degi red chili powder and cook for a minute on low flames. ● Finish it with ghee and let it cook for a while. ● Turn off the flames and set aside for further use. For Searing Cover ● In a pan, add ghee, once it's hot, place kulchas, pour some prepared tira and sear the kulchas on both sides until golden in colour. ● Transfer to a serving dish and serve hot with prepared chole. *********************** #choleculturestreetfood #cholerecipeinhindi #ranveerbrar
