A spicy, tangy and sweet chutney made from raw mango and jaggery(gud). A perfect balance of flavours that can be enjoyed with paratha, puri, katchori ,rice or eaten by itself. It can be served hot or cold. Ingredients: 2 Raw mangoes 2 Tbsp Cane sugar 250gms Jaggery (gud) ½ Tsp Ghee ¼ Tsp Asafoetida 4 Cloves ½ Tsp Fennel seeds ½ Tsp Onion seeds (kalonji) ¼ Tsp Coriander seeds 5-6 Black Peppercorns ½ Tsp Red chilli powder 1 Tsp Salt 3 Black cardamoms (seeds only) 2 Cups Water Directions: 1. Roughly grind fennel seeds, onion seeds, coriander seeds and black peppercorns in a pestle & mortar. 2. Peel and cut raw mango in to small cubes of similar size. Finely slice of pieces from near the mango seed. This will help thicken the chutney. 3. In a pan, heat ghee on medium low flame. 4. Add asafoetida and ground spices. Sauté. 5. Add the cut mango pieces. Mix well. 6. Now add salt and red chilli powder. Mix. 7. Now add water covering the mango. 8. Cover and cook on simmer till mangoes soften. 9. Now add the jaggery and cane sugar. Mix well. 10. Simmer and cook till jaggery and sugar dissolves. 11. Grind the seeds of the black cardamoms in a pestle & mortar to a fine powder. 12.
