After a decade of living in a van with a tiny sink, we finally unbox the oversized kitchen sink we’ve been dreaming about— but finding a 30-inch sink in Europe wasn’t easy… we had to order it from Germany and wait weeks for it to clear customs. This moment marks a huge milestone in our off-grid watermill renovation in Portugal, because right after the sink reveal, we make one of the biggest decisions yet: ordering our full kitchen. Instead of building everything from scratch like we originally planned, we pivot to a hybrid approach—combining modern, handleless cabinets with natural live-edge wood countertops sourced from our local mountain sawmill. Along the way, we source a second-hand oven hood from a charming local crêperie, explore a Portuguese granite quarry to find the perfect natural stone for our countertops, and continue progress on critical infrastructure projects like propane housing, water line rerouting, and radiant heating systems. But the transformation doesn’t stop inside… We also take on one of the most magical projects yet—cleaning and restoring the hidden cave beneath our watermill. This historic space once powered the mill itself, and now we’re carefully preserving its stonework while installing a French drain system to make it functional, dry, and usable again. What was once muddy, overgrown, and flooded is now becoming a cool, peaceful “chill zone” that honors the history of this place. But the biggest transformation happens beneath the house… We clean out and restore the hidden cave where water once powered the mill, uncovering historic features and turning it into a usable, beautiful space that connects us even more to the past of this incredible place.
