During our visit to the Amuzgo town of Huehuetónoc, we had the privilege of documenting in detail how artisanal chocolate and panela are made, two of the most representative culinary jewels of this region. In an atmosphere full of joy and celebration, the Amuzgo people gather on every special occasion to prepare their traditional chocolate, from roasting to grinding. In this experience, we invite you to live with us every moment of this ancestral process. We also got up early to witness up close the making of panela, the natural sweetener that has accompanied the native peoples for generations.
