For Business Inquiries: [email protected] Instagram:   / babafoodrrc   Facebook:   / babafoodrrc   For Short Recipes on TikTok: https://www.tiktok.com/@babafoodsrrc?... --------------------------------------------------------------------- Rasmalai Written Recipe With Directions Ingredients: -Milk (dhoodh) 5 Liters For Paneer: -Milk (dhoodh) 2.5 liters -Citric acid (tatri powder) ¼ tsp -Water (pani) 2 mugs -Arrowroot (calaf) ½ tbs -All-purpose flour (maida) ½ tbs -Sugar (cheeni) 1 tsp -Green cardamom (sabaz elaichi) powder ¼ tsp For Rabdi: -Sugar (cheeni) 120 g -Green cardamom (sabaz elaichi) powder ¼ tsp -Arrowroot (calaf) ½ tbs (add ½ cup water and make a slurry) For Sugar Syrup: -Sugar (cheeni) 3 kg -Water (pani) 1.5 liter -Green cardamom (sabaz elaichi) 4 -Hydro powder (sabut rongalite) 1 pinch -Soapnuts (reetha) 4 (remove seeds) Directions: -In a wok, add milk and bring it to boil. -For paneer, bring out 2.5 liters milk in a separate wok. Add citric acid and leave it for 1 min. Then, stir the spoon slowly (add more citric acid if needed). -Add water and mix well. Then, remove water. Add more water, mix and smash it with spoon. -Place a Muslin cloth on a wok and strain the water. Then, hang the paneer to remove extra water. -Bring it out to a tray and knead it. Add arrowroot, all-purpose flour, sugar, and green cardamom powder. Mix well with hand then kept in refrigerator for 20-25 mins. -Make rasmalai balls of 12-15 g each. -For rabdi, in a wok, add 2.5 liters milk, sugar, green cardamom powder, mix well and bring it to boil (twice). -Bring out the ½ liter milk to separate wok and set aside. Cook the rabdi on medium flame for 15 mins while continuously stirring the spoon. Gradually add slurry while continuously stir the spoon and cook it for 2 mins on high flame. Bring it out to a bowl and set aside. -For, sugar syrup, in a wok add sugar and water. Mix well and cook. Add green cardamom and hydro powder. Mix well and cook. -In a pan, add water ½ cup water and soapnuts. Bring it to boil for 5 mins. Pour it in a bottle, close the lid of bottle and shake well. -Add it to sugar syrup. On high flame, add rasmalai balls and bring it to boil. After 3 mins, smoothly stir the spoon on the top layer of sugar syrup. Cook it for 10 mins. Add water to remove the extra bubbles. On high flame cook it for 2 mins. -In a bowl, add water and add rasmalai balls to it. Dip it in water for 5 mins. After that, smoothly squeeze the rasmaali balls to remove extra water. -In a pan, add ½ liter Luke warm milk and add rasmalai balls to it.
