DAL DHOKLI CHEF AANAL KOTAK PREP TIME: 10-15 mins COOKING TIME: 25-30 mins INGREDIENTS • 1 cup toor dal • Pinch turmeric powder • Salt as per taste • 4 cup water • 2 tbsp oil • 1 tsp mustard seeds • 1 tsp cumin seeds • 3-4 nos. green chillies (chopped) • 1 cup tomatoes (chopped) • ½ cup peanuts • ½ tsp turmeric powder • 1 tsp red chilli powder • 1 tsp coriander powder • 1 tsp cumin powder • Salt as per taste • 2 tbsp lemon juice • 1 cup jaggery • 1 tbsp coriander (chopped) FOR DHOKLI: • 1 cup wheat flour • 1 tbsp besan • Salt as per taste • Pinch hing • ½ tsp ajwain • ½ tsp turmeric powder • ½ tsp red chilli powder • 2 tsp oil • Water as required FOR TADKA: • 2 tbsp oil • ½ tsp mustard seeds • ½ tsp cumin seeds • 2 nos. dry red chillies • 10-15 nos. curry leaves METHOD: • First wash toor dal properly and soak it in water for about 1 hour. • Then pressure cook the dal along with water, salt and turmeric powder for 3 whistle. • Transfer the boiled dal in a bowl and whisk it well. • Again add 1 cup of water and whisk it again. • Further set a pan on medium heat, add oil, mustard seeds, cumin seeds, green chillies, tomato and prepared dal mixture. • Add in all the spices along with lemon juice and jaggery. Mix everything well and boil for 5-10 minutes. • Now to make dhokli in a bowl add wheat flour, gram flour, salt as per taste, asafetida, ajwain, turmeric powder, red chilli powder and oil. Combine everything well. • Then add water and prepare a stiff dough. Cover the dough with a damp cloth and rest it for 10-15 minutes. • Divide the dough into equal portion, coat the dough in dry flour and roll it into a large chapati. • Further cut the chapati into squares or diamonds shape. • Add the dhokla into dal and cook the dhokla for 20 minutes on low flame. • Now for the final tadka, in tadka pan add oil, mustard seeds, cumin seeds, dry red chillies and curry leaves. • Pour the tadka over dal dhokli and serve it hot.
