One Pot Sausage Orzo is a cozy fall recipe that is one of my favorites this time of year…well…it’s good anytime. It is quick and easy comfort food on those chilly Autumn days. If you’re not a sausage fan - organic grass fed beef would work as well. I hope you will give it a shot. Bon Appetite! *recipe from Pepper app/Barefoot Neighbor Music: “Loving What Is” Epidemic Sound One Pot Sausage Orzo: 1 lb Italian sausage 1 cup Orzo pasta Splash of Cooking wine or dry white wine 1/2 jar sundried tomatoes 2 cups chicken stock 1 cup heavy cream Handful of spinach 1/2 cup Parmesan (or more if you’re a cheese freak🧀) Heat skillet and brown italian sausage. Drain. Add Orzo and cook 2-3 minutes. Add splash of wine. Cook down for a couple of minutes. Add rough chopped sundried tomstoes and Italian seasoning. Bring to boil. Cover - lower heat to simmer. Cook 10-15 min until orzo is done. Cut heat and add spinach and parmesan. Mix and let spinach wilt for a couple minutes. Serve with garlic sourdough toast and salad or your fave sides. Enjoy!😊
