This is how I made the BEST Focaccia Sandwich you've ever had

-Best sandwich ever? Yeah, it's not joke. You'll nee: For the tomato-basil spread: -2 dozen baby tomatoes -Olive oil -4 garlic cloves, minced -12 fresh basil leaves -Salt and pepper to taste For the arugula topping: -A handful of arugula -1 tsp olive oil -Pinch of sumac For the sandwich: -Focaccia bread, lightly toasted -Tomato-basil spread -Mayonnaise (just a little) -Slices of mortadella -Slices of prosciutto -Fresh burrata cheese Tomato Spread: In a pan over medium-high heat, warm a splash of olive oil. Add the baby tomatoes and cook until their skins begin to burst. Gently mash them in the pan. Stir in the minced garlic, basil leaves, salt, and pepper. Let it simmer briefly, then remove from heat. Once it’s cooled slightly, chop or mash the mixture to your desired texture and let it come to room temperature. Prepare the arugula topping: In a bowl, toss the arugula with a teaspoon of olive oil and a pinch of sumac. Assemble the sandwich: Lightly toast your focaccia. Spread a layer of the tomato-basil mixture on the bottom half, followed by a light smear of mayo.
