Here is the full recipe for two portions: Ingredients: 100g of arugula; 50g of sunflower seeds; 1 garlic; 1 chilli pepper; 50g of parmesan; half of lemon; approx. 10 tablespoons of olive oil; 1 long sweet potato; 1 teaspoon of salt and pepper; 100g of feta cheese; approx. 2-3 tablespoons of pomegranate seeds; parchment paper. 1. Wash arugula and put it in a food processor. 2. Put 50g of sunflower seeds on a preheated pan and roast them until lightly browned for a few minutes, stirring occasionally. 3. Once ready, add them to the arugula. 4. Then add remaining ingredients: juice squeezed from a half of a lemon, one garlic (crashed before), chilli pepper (cut before into pieces), 5 spoons of olive oil, 50g of parmesan. 5. Mix all ingredients in the food processor. 6. If pesto is too thick, add more olive oil. 7. Prepare a baking tray and put on top a parchment paper. 8. Peel one sweet potato, cut it lengthwise into long, thin slices (approx. 0.5cm each) and place them on the baking tray. 9. Pour on top five tablespoons of olive oil, salt and pepper. 10. Put the baking tray into the oven preheated to 190ºC for approx. 20 minutes (until potatoes are soft). 11. Once ready, place each slice on a plate. 12. Add pesto on top. 13. Cut a feta cheese into small pieces (or even crumble it) and put on top of potatoes with pesto. 14. Then sprinkle with pomegranate seeds. ENJOY YOUR MEAL! 🤗🤤 Enjoy your day! 🌞
