This is the recipe that won us 2nd Place in the wing category at Memphis In May. 12 wing flats Central City BBQ All Purpose Central City BBQ Champion Blend 1/2c + a little extra for glazing Central City BBQ Sweet BBQ Sauce (or your favorite sweet bbq sauce) 1/2c Franks Red Hot Buffalo Sauce Preheat your smoker to 300*, and add a couple cherry wood chunks. While your smoker is coming up to temperature, season all sides of the wings with both rubs. Place them on a cooling rack for easier handling. Put them in the smoker, and cook for about 30 minutes. Mix the two sauces together, then start checking the internal temperature of the wings. When the wings reach about 195* internally, remove from the smoker. Toss them in the sauce, and dust them with a little of the all purpose rub. Place them back on the smoker for about 5 minutes, then glaze them with a little more sweet bbq sauce.
