Summer is officially here! Time to make it even more official by making these easy Decadent Vegan Fudgesicles! Recipe below: Original recipe: https://vegetariangastronomy.com/crea... Recipe: 1 can of coconut milk 3/4 cup packed pitted medjool dates 1 cup unsweetened cocoa powder 2 teaspoons pure vanilla extract 2 Tablespoons coconut oil (I used deodorized/refined coconut oil) 1/2 cup water 1/2 cup unsalted cashews 1 Pinch of sea salt (omit if cashews are already salted) 1 Tablespoon vegan chocolate chips Put all ingredients (except for the chocolate chips) into a high speed blender/Vitamix and blend until smooth. Add in the chocolate chips and pulse to break them up. Pour into popsicle/fudgesicle molds and freeze for at least 24 hours. Once frozen, you may need to run the mold under warm water to get the fudgesicle to release. Makes approx 6-8 fudgesicles, depending on the size of your molds. Enjoy and cheers to living free :)
