Sautéed Kale and Tofu (vegan)

~Hello! This dish was inspired by a vegan scramble from a local breakfast restaurant, but without the potatoes. It can be eaten as a side dish or even as a main dish. It’s quick, healthy, and so delicious! (watch in 1080p) If you’re not vegan, can eat it with your choice of protein. My favorite is grilled or baked salmon! ~Recipe: 1 tbs. Oil of your choice 1/2 cup onion chopped 4 cloves garlic chopped One 7 oz package of baked or smoked tofu cut into cubes (I used Trader Joe’s Organic Baked Tofu) 5 oz mushrooms sliced ~ 7.5 oz kale chopped Salt & Pepper Optional: garlic powder, red pepper flakes, and lemon juice Directions: 1. Add 1tbs. oil of your choice into a large pan on medium heat. 2. Add onion and garlic. Sauté 1-2 minutes. 3. Add mushrooms and sauté few more minutes. Add a bit of salt and pepper. (Optional: add garlic powder and red chili flakes) 4. Add tofu and sauté until brown, around 3 minutes. Add zucchini and sauté until soft. 5. Add kale and sauté until wilted, around 5 minutes. 6. Add more salt and pepper to taste. Finish with squeeze of lemon juice. Done! Tip: Add roasted potatoes for a delicious breakfast hash!
