Tonight’s dinner was amazing and filled with lots of of deliciousness. Asian beef meatballs with Broccoli Meatballs: 2 lbs ground beef 1 egg 2 tsp ground ginger fresh 1/2 cup almond flour 1/2 tsp salt 1/2 tsp pepper 1/2 tsp garlic powder In a bowl add all ingredients and mix until combined. I let it sit while I prep my broccoli just so the almond flour can dehydrate. Line a sheet pan with parchment paper then with a cookie scooper, scoop out and make your meatballs. I keep a glass of water the help keep my hands clean and to help make beautiful balls. Place each meatball on pan spread out (just like we are to do 6ft when in public)🤪 be sure to preheat oven to 400 then place meatballs in over and bake for 15-20 minutes (oops I did 30) Sauce: 2/3 cup coconut amino acids 1/4 cup balsamic vinegar 2 tbsp sesame oil toasted if you have it. 3-4 minced garlic 1/2 tbsp Dijon mustard 1 tsp ginger freshly grated If you want some heat add a pinch of red pepper flakes 2 tsp arrowroot mixed with 1 tbsp of water. If your using a thinner balsamic you can add thus to help thicken sauce In a sauce pan add add all ingredients and bring to a low boil. Reduce to a simmer and cook until reduced by 1/3 and is thickened. For garnish slice green onion and add white sesame seeds. Broccoli: Cut a head of broccoli and place in a pan with water and steam until fork tender. In a dish add broccoli and meatballs, drizzle with sauce and garnish with green onion and sesame seeds.
