Aloo Samosa (आलू समोसा) : Preparation Time: 3 hours | Cooking Time: 45 minutes | Servings: 6-8 Ingredients : For the dough Aashirvaad atta: 1 cup Ajwain: 1 tsp Oil: 1 tbsp Water: as required For the filling : Oil: 1 tbsp Cumin seeds: 1 tbsp Coriander seeds: 1 tbsp Green chilies (chopped): 1 tsp Ginger (chopped): 1 tsp Coriander (chopped): 1 tbsp Mint (chopped): 1 tsp Kasuri methi: ½ tsp Red chili powder: 1 tsp Amchur powder: 2 tsp Black pepper powder: 1 tsp Black salt: ½ tsp Aashirvaad salt: as per taste Garam masala: 1 tsp Potatoes (boiled and mashed): 1 cup Method: In a bowl, add the atta, ajwain, salt, oil, and mix. Next, use water little by little to knead the dough. Rest the dough for 1-2 hours. For the filling, heat oil in a pan. Add the cumin seeds, coriander seeds, ginger, green chilies, and Kasuri methi. Saute. Add the remaining spices and ingredients for the filling and saute. Lastly, add the boiled potatoes and mix well. Make sure that the potatoes are coated evenly with the spices. Once the dough has rested, divide it into 4 portions and knead down to smoothen the portions. Roll the dough out in an oblong sheet, divide horizontally, then roll further. Smear water in half part of the flat end and form a cone by sticking the wet edge. Fill the cone generously with the stuffing, smear water in the round edge, and stick together as shown in the video. Place the formed samosas to rest until the skin feels dry and rough, approximately 30-45 minutes. Warm oil to deep fry the samosas, add them in and fry in low heat until golden brown.
