Popular Bengali Basanti Pulao Recipe (Yellow Misti Pulao) - Tips To Make Perfect Non Sticky Rice For Pulao - No Onion Garlic Recipe Basanti pulao is a traditional Bengali dish made during any festival or special occasions. Basanti in Bengali signifies the color yellow hence the pulao has its characteristic yellow color by adding turmeric powder. Some people even add saffron to get that yellow color. Addition of whole spices and ghee along with nuts and raisins makes this rice taste extremely delicious. At the same time it is quite sweet hence the name Misti pulao, misti being sweet in Bengali. You can even use kalijeera or jeera samba rice. Basmati rice can even be used. If using Basmati rice, it needs to be soaked in water for 15 minutes prior to air drying. Gobindobhog gets too soggy if soaked in water. Ghee - 4 tablespoons. 2 tablespoons to be added while marinating rice, 1 tablespoon for frying cashews and raisins, 1 tablespoon to be added at the end. Turmeric powder (haldi/holud) - 1/2 teaspoon Grated ginger - 1 teaspoon Dried bay leaf (tejpatta) - 1 whole Green cardamom (choti elaichii) - 4 to 5 cinnamon stick (dalchini) - 2 inch length cloves (lavang)- 4 unroasted cashew nuts (kaju) - 30 gm/1 oz or about 20 whole golden raisins - 2 tablespoons / 30 gm / 1 oz Hot water - boil 4 cups of hot water. Use the same cup in which you measure rice to measure water. Add 3 & 3/4th cups in the beginning. Save that 1/4th cup for later and add it if needed. Ground nutmeg (optional) - 1/8th teaspoon or just a pinch Ground mace (optional) - 1/8 th teaspoon or a pinch Garam masala powder - 1/4 th teaspoon. Do not add too much as that will be too over powering. Sugar - I used 2 tablespoons heaped as my family likes it to be mildly sweet. You can go up to 5 tablespoons.
