Like 👍 and subscribe to help me continue sharing recipes with you! 👊 Calories & Macros 📊 Per Serve: 395 calories 40g Protein | 26g Carbs | 14g Fat FULL RECIPE 👇 Egg McMuffin with Sriracha Mayo & Jalapeño Serves: 4 🥯🥯🥯🥯 (1 McMuffin per serve) 🥯 Ingredients Sriracha Mayo -2 tbsp (30g) light mayonnaise -2 tbsp (30g) plain, non-fat Greek yogurt -1-2 tablespoons sriracha (adjust to your preferred spice level) -Pinch of salt Bacon -2 slices Canadian bacon (or reduced fat or turkey bacon) Beef Patties -3/4 pound (320g) ground beef (95/5 or better, 80 g per patty) -1/4 tsp garlic powder -1/4 tsp onion powder -Salt and pepper to taste Eggs -4 large eggs -¼ cup (65g) plain, non-fat Greek yogurt -2 tablespoons jalapeño (sliced canned or jarred, and finely chopped) McMuffin -4 whole-wheat English muffins -4 slices cheese 👨🍳 Instructions -Add all sauce ingredients to a bowl and stir until combined. -Cook and chop the bacon -Season the beef and cook patties -Whisk eggs with Greek yogurt then cook in a covered pan. Add chopped bacon and jalapeños once the eggs start setting. Cover again until eggs are cooked. -Transfer eggs to cutting board and cut to your desired shape -Toast the english muffins -Place the cooked patties on the toasted muffin bottoms. Top each with egg, cheese, a dollop of sriracha mayo and finally the top half of the muffin. Notes: Gluten-free: Use a gluten-free English muffin.
