Wagyu Tri Tip Recipe Ingredients: Wagyu Tri Tip Killer Hogs AP Seasoning Killer Hogs Steak Rub Start by using a Jaccard to tenderize the meat. Season the Tri Tip with AP seasoning followed by a good coating of Steak Rub. Let the meat sit on the cutting board and sweat in order to absorb the seasoning for about 20 minutes while the coals heat up. Once the coals are ready (I used the vortex upside down to contain the coals and focus the direct heat for searing) insert a temperature probe in the thickest part of the Tri Tip and place the it on the indirect side of the grill and add a chunk of hickory wood for additional flavor. Once the Tri Tip reaches an internal temperature of 110 degrees, move it directly over the coals and sear it on each side for 1-2 minutes to reach a final internal temperature of 125-130 degrees. Remove it from the grill and let it rest for 10 minutes in order to allow the juices to redistribute evenly before slicing and serving.
