Chicken Curry - Kori Rotti Chicken Curry Specially made for the local Traditionally made Kori rottis, the curry is subtle and mild on flavors and thus boost the full potential of the Rottis, this is a unique blend of daily used Coastal Spices creates a unique flavor Which is really Enjoyed by the Mangalorean people. This dish is usually served during occasions and family gatherings. Ingredients 1 KG of Chicken ½ tsp of Ghee 1 Medium Sliced Onion ½ tsp of Ginger Garlic Paste 1 Medium Size Tomato ½ tsp of Turmeric Powder Salt as per taste Coriander Leaves For Masala 2 Medium Sliced Onions 10 Nos Curry Leaves 5 Garlic Cloves Coriander Leaves 2 tbsp of Coriander Seeds 3 Cardamoms 4 Cloves 8 Black Peppercorns Small piece of Cinnamon Stick ¼ tsp of Cumin Seeds ½ tsp of Fennel Seeds 13 Chilies 2 Cups of Grated Coconut Small Piece of Tamarind ½ tsp of Turmeric Some water Method We start with boiling the Chicken first, in a pan add 2 tbsp of Oil, you can use any oil, then add ½ tsp of Ghee & 1 Medium Sliced Onion, fry the onion until the onion Turns Soft & Slight Brown as in the video. Then add ½ tsp of Ginger Garlic Paste & 1 Medium Sized Diced Tomato. Fry Everything until the ingredients are soft. Then add 1 KG of Chicken followed by ½ tsp of turmeric Powder & Some salt for taste. Mix it well and then add a small amount of Coriander leaves, close the lid and then let the chicken cook well. When the chicken is cooking you can start with the masala. To begin with the Masala take a pan and add 2 tbsp of oil, again you can use any type of oil, add 2 Medium Sliced Onions Fry until Golden Brown, then add 10 nos of Curry leaves, 5 Garlic Cloves, Coriander Leaves. fry them well and then place them on a plate and let it cool down. In the same pan add 1 tbsp of oil 2 tbsp of Coriander Seeds, 2 tbsp of Coriander Seeds, 3 Cardamoms, 4 Cloves, 8 Black Peppercorns, Small piece of Cinnamon Stick, ¼ tsp of Cumin Seeds,½ tsp of Fennel Seeds. Roast them well on Low flame and place them on a plate and let it cool down. Again in the same pan add ½ tbsp of oil & fry 13 Kashmiri Chilies and place them in on a plate, add 2 Cups of Grated coconut to the pan and roast it until it becomes golden brown as shown in the video. Take a blender and add all the roasted Ingredients and grind to fine paste. Do the same with the fried coconut by adding a small piece of tamarind, ½ tsp of turmeric powder and some water. Now you have 3 things done Boiled Chicken, Blended The Masala Paste & Blended the Coconut Paste Process After the chicken is boiled properly add the Masala paste and also the coconut paste mix it well and add some water as per your consistency and thickness of the curry you require, then once the curry starts to boil add the coriander leaves and mix it well.
