SOURDOUGH MULTI GRAIN BREAD 1 cup sunflower seeds 1 cup ground flax 1 cup sesame seeds 1 cup flax seed 5 cups hot water Soak seeds in hot water overnight In Large mixer add 4 cups water 2 quarts sourdough starter 8 cups milk 1 cup honey 1 cup molasses (or substitute with honey) 2 cups yogurt 1½ cup goose lard ½ cup sea salt. Around 11 in the morning: Yeast mixture: 4 tbsp yeast 1 cup water Add a gallon of whole wheat flour and the rest of it white flour. Make it tough, as it gets a little softer in the fridge. Let mix till it passes windowpane test. When done mixing put in fridge overnight. In morning: Weigh out 1.5 oz loaves and shape into round loaves, top with whisked eggs, then roll in sesame seeds. Let rise about four hours. Cut deep slit with razor in middle right before putting into preheated oven. Preheat combi @ 100% steam 450 degrees Combi: @100% steam 400 degrees for 5 minutes. Turn to hot air: @300 degrees for 25 minutes OR ADD PROBE. Set to be ready @ 212 degrees
