Steps: • In a bowl mix 1 cup whole wheat flour and 1/2 cup maida (optional) with below ingredients: salt , hing, chilli flakes, carom seeds (ajwain), kasuri methi and ghee • Knead into a soft dough and keep it covered for 15 minutes • After resting dough knead again fora minute and make 3 to 4 large balls • Roll all the balls on a flat surface like how you would do a roti and keep aside • Apply a layer of ghee on each and place one on top of the other with atleast 3 of them • Roll all three together • Cut into equal parts and press with your palm For AirFrying • Preheat Air Fryer at 180°C for 5 minutes • Place the flattened mathri on the grid and bake for 10 minutes at 180°C. Its gets crispier after a while and can be stored for about a week. Tips: • Maida is optional, it just makes the dough more malleable • It might appear a bit soft when just taken out but it gets crispy when settled.
