KETO BLUEBERRY CRUMBLE TEA CAKE | 生酮藍莓酥頂蛋糕 This recipe makes a 20cm square baking tin of blueberry crumble tea cake. Blueberry Tea Cake Batter: Wet Ingredients: 3 Large eggs at room temperature 65g Granulated sweetener of your choice (monk fruit sweetener or erythritol) 100g Greek yogurt or sour cream 1 tsp Vanilla extract 65g Melted unsalted butter Dry ingredients: 165g Blanched almond flour 1tsp Baking powder 100g Fresh blueberry Crumble Topping: 50g Blanched almond flour 15g Coconut flour 35g Granulated brown sweetener of your choice (monk fruit sweetener or erythritol) 30g unsalted butter soften at room temperature and cut into small cubes 1/4tsp Cinnamon powder Lemon Icing (optional): 2 tbsp Powdered Erythritol 1 - 1.5 tbsp cream/ Almond milk 1tsp Lemon juice TIPS: Prepare all wet ingredients to room temperature before mixing them up, otherwise the melted butter might not be able to incorporate completely. The smaller you cut the softened butter the easier they will be to work with the dry ingredients to make the perfect crumble like topping. Use fresh berries if you can as frozen berries might have too much water make the cake soggy. Every oven is different, monitor the cake while it's baking reduce the temperature slightly if the top becomes brown too fast or cover with foil for the last 5 minutes.
