Kotelett Sammy | German Pork Sandwich | German Barbecue Recipes | Spatchcock Funk

Time to get intergalactic, ya’ll! Wait, we mean international. In honor of our friends from Tessy plastics, who started this company here after immigrating from Germany, we’ve got a fun take on classic German and American barbecue styles, with some other flavors to keep everything together, baby. In Germany, BBQ is a national sport, just like it is here in the states. Pork is usually the star there, cuts of it or, in sausage, where in the states, the basic proteins are hamburgers and hot dogs. We’re all about mixing traditions and creating new ones, so this is our new take on creativity - an Americanized Kotelett Sammy, while paying homage to all the German immigrants who brought us so many amazing flavors. We throw some juicy pork chops into a German-style marinade, then make an all-time banger sandwich on a Kaiser roll, with brats, sauerkraut and carmelized onions, with a stone-ground mustard/mayo. Sturdy, strong rolls for a sturdy, delicious sandwich for them sturdy strong folks at your next barbecue. This is sure to fill out those lederhosen, so get ready to roll! -- Ingredients for Sammy • 4 bone-in pork chops, at least an inch thick • Kotelett marinade (recipe below) • 4-6 Kaiser rolls • ½ C mayo • ¼ C German stone ground mustard (outside of the marinade) • ¼ C vegetable oil (outside of the marinade) • 2 sliced vidalia onions (outside of the marinade) • 1 tsp of brown sugar • 4-6 links of a good bratwurst, butterflied • 4 big heirloom tomatoes, sliced thick • 8 leaves of a sturdy lettuce • 1 C sauerkraut (recipe below, but store bought is just fine) -- Ingredients for Marinade • 1 ½ sliced vidalia onions • 2 C vegetable oil • 4 crushed up dried allspice berries (or a little under a ¼ tsp of ground allspice) • 3-4 crushed garlic cloves • 2 tsp stone ground mustard, German, ya’ll • 2 tsp smoked paprika • 2 tsp curry powder • 1 tsp dried thyme • 1 tsp dried oregano • 1 tsp salt • 1 tsp fresh ground black pepper • ½ tsp cayenne pepper -- Directions for Marinade • Combine all ingredients in a bowl or bag -- Ingredients for Sauerkraut • 1 lb of fresh cabbage (we like green), chopped really, really thinly (use a mandolin or food processor if needed) • 2 tsp of table salt • 1 tsp of caraway seeds • 1 tsp of granulated sugar -- Directions for Sauerkraut • Toss the cabbage in a bowl • Throw in the salad • Stir so cabbage is coated evenly • Let sit for 20 minutes • Press, getting all the liquid out, but leave the liquid, at least 5 times • Pour it all into an airtight plastic container or glass jar • Add in sugar and caraway seeds • Store for at least 3 days, up to 10, then they’re ready to go -- Directions for Sammy • Mix your marinade, and stick the pork chops in (we like doing it for 24 hours) • Combine the mayo and the stone ground mustard • Heat vegetable oil on your flat top or frying pan • Remove pork chops from marinade, and grill them 3 minutes on each side, then set aside to rest • Meanwhile, add the onions to the oil, and turn them translucent (add a dash of brown sugar if you like), caramelize ‘em up • Cook the bratwurst until brown and a little crisp, remove the brats and the onions • Toast the rolls if you want in the oil • Cover the inside of the top of the roll with the mayo mixture • Slice the pork chops lengthwise into ¼ inch strips • On the bottom of the roll, add the lettuce • Put the pork chop slices in a layer on the lettuce • Top with the brats • Add the onions • Add the tomatoes • Throw the top on, take a bite and be a little bratty Bonus Tip - You can make this sandwich with beef (like prime rib or shaved steak), and add an Italian sausage, exchange the sauerkraut with sautéed peppers and onions and mix the mayo with some dried Italian seasoning and you’ve got a whole ‘nother animal, literally. -- Time Stamps 0:00 Intro 0:21 What is a Kotelett? 0:56 Make marinade 2:58 Grill some caramelized onions 3:35 Throw marinaded pork on grill 4:01 Make topping 4:15 Cut pork into slices 4:30 Put sammy together -- Want more monster recipes and see what we're about?
