Salt and ghee are optional and not used in traditional way of it's cooking. Sangati is a dish mainly from AP, Telangana & some part of TN. This is mix of ragi and rice. Both are made similar ways but taste different. Sangati is lighter and will digest faster than ragi mudde. Vegetarian eat it with sambar and dal curry and non vegetarian used to eat with mutton or chicken gravy curry. ** Ragi Mudde can be made from soaked and ground ragi as well. Many people used to sprout it and grind and make it. It was a food for farm working people (due to slow digestion of this grain) and people will not feel hungry after a long hours of working time but now it is a common food for urban population as well due to many health benefits. Its sugar level is less compared to the other grain and healthy food for those who are diabetics. It was consumed in most part of India in 19 th century since the non-availability of other grains like rice, wheat etc. The climatic condition of the Deccan plateau attracted many to these grains cultivation since this crop consume less water to grow compare to other grains.
