Peanut Butter Banana Bundt Cake // vegan, gluten-free, oil-free

RECIPE 3 medium bananas, mashed/pureed 2 flax eggs 1/2 cup coconut sugar 1/2 cup peanut butter 1 cup nondairy milk 2 cups oat flour 1 1/2 cups almond flour 1 tbsp baking powder 1 tsp cinnamon 1/2 tsp salt glaze 1/4 cup peanut butter 1/4 cup maple syrup 1/4 cup coconut oil 1/2 tsp salt 1 tsp vanilla 1. Mix together the mashed banana, flax eggs, coconut sugar, peanut butter, and nondairy milk. 2. In a separate bowl, combine the oat flour, almond flour, baking powder, cinnamon, and salt. Whisk to eliminate any clumps. 3. Add the wet ingredients to the dry, and mix to form a batter. 4. Pour into a bundt pan that has been generously sprayed with nonstick spray. 5. Bake for 40-45 minutes at 350ºF. 6. Remove from the oven. Cool for 10 minutes. Flip onto a cooling rack to cool completely. 7. Whisk together the glaze ingredients until smooth. 8. Spoon glaze onto cooled cake, and sprinkle with chopped roasted peanuts. 9. Enjoy!
