SIMPLE! Ginger Lemon Scone Recipe | Amelia Does Dinner

You can have them sweet or savory. It's just perfect for high tea. I usually enjoy my scones with jam and/or clotted cream. But, when they're just out of the oven, so hot and fresh, I usually like to have my first one with just some salted butter. So good. You can enjoy your scones with ham and cheese or, with pretty much whatever you'd like. For something just amazingly delicious, try my scone recipe, with fried chicken. Either on the side or as a fried chicken scone sandwich! Here's the step by step on how I did it. When you learn how to make scones, you'll always want a scone with your coffee or tea. You Will Need: 3 ½ cups Flour (all purpose/plain) 5 level tsp. Baking Powder Pinch of Salt ¼ Cup White Sugar 1 Stick Cold Salted Butter (cut into small pieces) 1 Whole Egg 2 oz. Heavy Cream (Substitute: Whipping Cream) 7 oz. Whole Milk 2 tbsp. Lemon Zest ½ Cup Chopped Candied Ginger Milk/Egg Wash to glaze What You Need to Do: 1. Preheat the oven to 350°F. and line a baking tray with Parchment Paper. 2. Combine the dry ingredients in a large bowl (flour, baking powder, salt, sugar). 3. Lightly whisk the egg, and combine it with the wet ingredients ( egg, milk, cream). 4. Using your fingers, rub in the cold butter into the flour until it resembles coarse sand. 5. Add the lemon zest and ginger. 6. Add the wet ingredients to the bowl in two batches, and use your hands to gently incorporate. Do Not Knead. 7. When the dough comes together in a ball, remove from the bowl and gently pat it down to approx. 1 inch on a lightly floured surface. 8. Using a scone/biscuit/cookie cutter, cut out your scones. 9. Brush the tops with milk or eggwash. 10. Bake for 35 mins. or until the tops are golden. 11. Enjoy with clotted cream, jam, butter or anyway you like! Tips *You can use your hands from start to finish with this dough. Absolutely No Kneading, or Rolling Out required. Be gentle, and minimal with the handling of the dough, this will benefit the texture, and ensure that you get light and fluffy scones. *The Butter should be very cold. I leave my butter and wet ingredients in the fridge until I'm ready to incorporate them. *Always Preheat the oven, and place the scones in the oven as soon as possible.
