Made with our Organic Old Fashioned Rolled Oats and Chia Seeds, they bring together wholesome ingredients, satisfying texture, and just enough sweetness to make mornings feel special. 🍪 Makes: 14 cookies Ingredients 3/4 cup All-Purpose Flour 1 cup Old Fashioned Rolled Oats 1/4 cup unflavored collagen 1 1/2 Tbsp Organic Chia Seeds 1/2 tsp baking soda 1/2 tsp cinnamon 1/2 tsp sea salt 1/3 cup chopped pistachios 1/3 cup chopped almonds 1/3 cup unsweetened shredded coconut 1/3 cup finely chopped dark chocolate (60–70%), plus extra for topping 1/4 cup butter, melted 1/4 cup unsweetened peanut butter 1 large egg + 1 egg yolk 1/3 cup maple syrup or honey 2 Tbsp milk 1 tsp vanilla extract or 1 Tbsp vanilla bean paste 1/2 tsp almond extract (optional, but highly recommended) Instructions Line a baking sheet with parchment paper and set aside. Preheat oven to 350°F. In a large bowl, mix all dry ingredients through the dark chocolate until well combined. In a separate bowl, whisk together all wet ingredients. Add wet ingredients to dry ingredients and gently fold until no dry streaks remain. Let the batter rest for 5 minutes so the chia seeds and collagen absorb moisture.
