Make perfectly crispy roasted potatoes with golden edges and a punchy rosemary salt. Using simple ingredients and a no-fuss method, this recipe will have you roasting potatoes like a pro. Whether it’s for a side dish or a snack, these potatoes deliver crunch and flavour every time. Ingredients Potatoes 1kg white potatoes (Russet, Dutch Cream, or Yukon Gold), peeled and cut into even chunks 4 tbsp beef tallow 1 tbsp salt 3 whole garlic cloves, peeled Rosemary Salt 2 sprigs of fresh rosemary 3 sprigs of fresh thyme 3–4 fresh sage leaves 3 tbsp flaky salt Method Peel and cut the potatoes into even-sized chunks. Place them in a pot of cold water (not boiling) and add 1 tablespoon of salt. Bring the pot to a simmer over medium heat, then reduce the heat to low and simmer gently. Cook for 10–15 minutes, depending on the size of the chunks, or until the edges of the potatoes are slightly soft, but the centres remain firm. Preheat your oven to 180°C (350°F). Once the potatoes are parboiled, drain them well and spread them out on a tray to cool and dry. Place the beef tallow in a large roasting tray and put it in the preheated oven for about 10 minutes, until the tallow is hot and melted. Add the dried potatoes to the tray with the hot tallow, carefully turning them to coat evenly. Roast in the oven for 25 minutes. While the potatoes are roasting, roughly chop the rosemary, thyme, and sage. Add the herbs to a blender or spice grinder along with the flaky salt and blend for 1 minute. Spread the rosemary salt out on a tray to dry until needed. After 25 minutes, remove the tray from the oven. Use tongs to turn each potato, ensuring they are coated again in the tallow. Return the tray to the oven for another 25 minutes. After 25 minutes, remove the tray again and add the peeled garlic cloves.And coat the potatoes in the tallow again. Place back into the oven for a further 10 minutes. Once the potatoes are done, remove them from the tray and drain on paper towels to remove excess fat. Transfer the potatoes to a mixing bowl, sprinkle with 1 teaspoon of rosemary salt, and toss to coat evenly.
