15 Minute One-Pan Ginger Chicken is my ultimate easy comfort dinner – juicy chicken, sweet onions, and plenty of ginger over fluffy rice. This cozy weeknight recipe uses just one pan, simple ingredients, and about 15 minutes of cooking time. Ginger, garlic, and green onions make a glossy, savory, sweet sauce that hugs every piece of chicken. It’s perfect for busy evenings when you want something homemade, warming, and satisfying without spending hours in the kitchen. Slice the chicken into bite-sized pieces. Add pepper, soy sauce, 1 tbsp oil, and starch, and mix well to coat every piece. Let it marinate while you prepare the aromatics. 2. Peel the ginger (I use the spoon method shown in the video), then slice it. Slice the onions, mince the garlic, and separate the white and green parts of the green onions. 3. Heat a little oil in a pan. Add the ginger first, and cook until it sizzles, turns golden, and becomes fragrant. 4. Add the garlic and the white parts of the green onions, then the marinated chicken. Stir-fry on medium–high heat until the chicken turns golden brown. 5. Add brown sugar and let it caramelize slightly on the bottom of the pan, then mix it into the chicken for extra color and flavor. 6. Pour Shaoxing wine, and boil off all the alcohol, then add the sliced onions. 7. Then make the sauce with chicken stock, soy sauce, dark soy sauce, and oyster sauce. 8. Let everything simmer for about 7 minutes, then add the green parts of the green onions. Turn off the heat and finish with the green parts of the red onions. Serve immediately over hot rice and enjoy your one-pan ginger chicken! If you try this Ginger Chicken, let me know in the comments how it turned out and what comforts you after a long day.
