White Chocolate Cardamom Cookies

Anyone who knows me knows I’m an advocate for all things butter so here I am, making one of my fav treats with @Kerry Gold butter! Ingredients: 150g Kerry Gold Butter 1/2 cup Brown Sugar 1 Egg 1tsp Vanilla Essence 1tsp ground Cardamom 1/3tsp Bicarb 2/3tsp Baking powder 3tbsp Corn Flour 1 Cup Flour 150g White Chocolate, cut into chunks Method: 1. Soften butter in the microwave for 20secs. Add brown sugar & mix with wooden spoon until combined. 2. Add egg, vanilla & cardamom to butter and sugar, mix until combined. 3. Now add flour, corn flour, bicarb & baking powder to butter mix. Use a wooden spoon to incorporate all that flour in. This may take some time but it will com together. 4. Add white chocolate chunks and stir in until evenly distributed into the cookie dough. 5. Using 2 tablespoons or a cookie scoop, scoop cookie dough onto grease proof paper and freeze for at least 2hrs. 6. Preheat the oven to 180 degrees C, arrange cookies on an oven tray & bake for 15mins.
