Coconut cashew burfi is an absolutely tasty yet easy to make sweet. This tastes more or less like coconut burfi except that this has a soft and juicy inside and a firm outside. When you bite through the burfi, you can feel the juicy insides and that is because of the added cashews. Pointers: 1. Make sure to stir continuously as the bottom might burn because of the cashew paste. 2. Keep the flame always on medium. Since we have added cashews, high heat might release fat/oil making the burfi oily. 3. You can add a pinch of cardamom if you want. 4. You can also substitute coconut sugar instead of regular sugar.
