KETO INSTANT POT BACON CHEESEBURGER SOUP - 5.8 G NET CARBS!

Bacon cheeseburgers are one of my favorite foods, but when it's cold outside I need something to warm me up from the inside out! This bacon cheeseburger soup has all of the flavors of the comfort classic but in soup form and is even better with your favorite burger toppings added to it. It's kid approved as well, so you'll be lucky if you end up with any leftovers! Ingredients: 6 slices of bacon, diced 1 pound ground beef - I used 93% lean 1tbsp Montreal Steak Seasoning 1tbsp Garlic Powder 1/2c onion, chopped 2/3c petite diced tomatoes, drained 1tbsp yellow mustard 1tbsp Worcestershire 1 pound radishes, quartered 4c beef broth 1/2c pickle juice 4oz cream cheese 1c heavy cream 8oz cheddar, grated - I used fresh, but bagged pre-grated cheese would be fine (it may be a little grainy though) 1tsp xanthan gum Set pressure cooker to Sear/Sautee function and add diced bacon. Cook until crisp and remove, leaving the grease. Add ground beef and cook until browned, breaking apart. Add Montreal seasoning, garlic powder, onion, tomato, and mustard. Stir well. Add Worcestershire sauce, radishes, beef broth, and pickle juice - give it another stir. Place the lid on the pressure cooker, seal, and set on manual for 15 minutes. After cooking, allow to naturally release for about 30 minutes. Remove the lid and add cream cheese, mixing in as much as possible - there will be little clumps, it's okay. Add heavy cream and grated cheddar, stir well. Add xanthan gum and stir quickly and pretty vigorously - it clumps easily so use some elbow grease! Add 1/4tsp at a time more until soup reaches your desired thickness - it thickens more with time too Serve with cooked bacon and any other burger toppings you like! I added a little more cheese, bacon, sliced pickle, and green onion. Makes 6 servings at 5.8g net carbs and 525 calories per serving This can also be made in a slow cooker or on the stovetop but will need to cook for a while until the radishes have softened. Speaking of radishes, they lose their bitterness when they cook! They usually have a sweet nutty flavor when roasted, but are pretty neutral in this soup and are really just there because I wanted some extra texture!
