I know what you’re thinking: Gluten-Free? Paleo? Must taste disgusting right? This is probably one of the most delicious cakes you’ll ever eat! It’s moist, fluffy, tasty, perfectly sweetened… and healthy! For the fat component, we use coconut oil. For the sugar component we have honey, apples, and carrot. For the flavor component we have lovely spices like vanilla, cinnamon, and nutmeg. And or protein we have 2 beautiful, organic range-free eggs! WHAT YOU'LL NEED: DRY INGREDIENTS 2 cups almond flour ¼ cup gluten free flour (or arrowroot flour) 1 tsp cinnamon ½ tsp salt ½ tsp baking soda dash of ground nutmeg WET INGREDIENTS: 2 eggs ¼ cup coconut oil ½ cup honey 1 tsp vanilla (if your vanilla is in powder form, add it to dry ingredients bowl instead) 1 apple (optional to remove peel) – cubed 1 carrot, grated
