Strange tales kitchen Prawn mango & Passion fruit ceviche 3/4 prawn (depending on size) 2 juice of lime ¼ mango diced 2 spring onions sliced 1 tomato peeled & diced ¼ passion fruit Pinch of chilli flakes ¼ tsp minced garlic Coriander chopped Salt & black pepper Method 1. Peel, devein and remove heads from prawns. Boil the heads for 2 minutes chill and set aside. 2. Chop the raw prawns add salt, black pepper and lime juice, rest in fridge for at least 10 minutes. 3. Mix all the rest of the ingredients together. 4. Serve with the cooked prawn heads and sprigs of coriander.
