Mutton Rendang Rendang Kambing Main Ingredietns: 1/2 kg mutton (Cute into cube size) 2 cup water 1/2 cup coconut milk 1/2 cup cooking oil 2 tbsp tamarin paste 1 sprig Kaffir lime leaf 1 tbsp kerisik Spices: 2 cardamom pods 2 cloves 2 pcs cinnamon stick 2 star anise Minced Ingredients: 12 shallots 2 inches ginger 7 cloves garlic 2 inches galangal 8 pcs candle nuts 1/4 cup water Curry Paste: 2 tbsp meat curry powder 1 tbsp chilli powder 1 tsp corriander powder 1 tsp cumin powder 1 tsp fennel powder 1/4 cup of water Seasonings: 1 tbsp mushroom powder 2 tbsp sugar Salt to taste Instructions Cut the mutton meat against its grain, into cube size. Rinse and set aside. Heat wok with 1/2 cup of oil on medium heat. Add spices, saute for few seconds, then add minced ingredients. Saute until fragrant. Stiring occasionally and adding a little water in between to avoid burning. Add curry paste, stir until little oil float on top of the spices pecah minyak. Add mutton meat, stir for 2 mintutes. Then add 2 cups of water. Covered, cook until low heat. Stiring occasionally to avoid burning. Once the water reduce to half, add tamarin paste, kerisik and coconut milk. Continue to simmer until the the gravy reduce to half or sligthly thicken. Add seasoning and kaffir lime leaf. Continue to simmer until the sauce thicken and the oil float on top of the curry (pecah minyak).
