Honey Sweetened Banana Pudding with Homemade Vanilla Wafers

Honey Sweetened Banana Pudding 1/3 c organic cornstarch (or at least non GMO) 2 Tbsp plain flour 1/4 tsp salt 3 c milk 1/2 c great quality honey 3 whole eggs OR 5-7 egg yolks 1 Tbsp butter 2 tsp vanilla Homemade Honey Sweetened Vanilla Wafers ripe bananas (I used 2 but feel free to overindulge) In a medium saucepan (ideally with a heavy bottom surface, to prevent scorching) combine the cornstarch, flour and salt. Turn cooktop burner to medium low to begin heating the saucepan. Slowly add a small amount of milk to the flour mixture; just enough to make a liquidy (I made that word up, pretty sure) paste. Mix until all the flour and starch lumps are gone and it’s completely smooth. Add eggs and honey and whisk until completely smooth and then add remaining milk. Cook over medium to medium low heat, whisking often, until mixture becomes thicker and almost pudding-like. Remove mixture from cooktop and add butter and vanilla and mix well. (You can optionally add 2 Tbsp cream cheese OR sour cream at this point to give it a different and fabulous flavor!) Allow cooked pudding to cool slightly. In a casserole dish, place your Honey Sweetened Vanilla Wafers in a layer, covering the inside bottom surface. Top with sliced ripe bananas then pour pudding mixture over banana slices, making sure to cover them completely. Arrange additional vanilla wafer slices on top if desired.
