This is SUCH a yummy pudding! Who knew that tofu could make such a creamy, decadent, healthy pudding? Spicy Mexican Chocolate Pudding Recipe Ingredients: 1 cup grain sweetened chocolate chips ¼ cup unsweetened almond milk or soymilk ½ cup unsweetened almond milk or soymilk 2 packages firm silken tofu ¾ cup maple syrup 6 Tablespoons unsweetened cocoa powder 1 teaspoon cinnamon 1/8th teaspoon cayenne pepper (optional) 1/8th teaspoon red pepper flakes 1/8th teaspoon nutmeg 1/4th teaspoon ground ginger Pinch of salt 1 teaspoon vanilla ¼ jalapeno (remove majority of the seeds) Directions: In a double boiler, melt the chocolate chips with the ¼ cup of milk. When the chocolate has melted, spoon into a high powered blender or food processor. Combine the ½ cup milk and the jalapeno, chopped, in the processor with the chocolate. Mix on a high speed until the jalapeno pieces are thoroughly processed. Then, add the tofu blocks, maple syrup, cocoa powder, cinnamon, red pepper flakes, nutmeg, ground ginger, salt and vanilla. If you prefer a spicier pudding, add the cayenne. Blend until smooth and creamy. Spoon into a container and refrigerate for at least 30 minutes before serving. Garnish with ginger snap cookies and serve! Serves 6 Of course, tofu isn't for eating every day, but in moderation it's a great alternative to dairy. Make sure to use Silken tofu or it won't be creamy. Enjoy this wonderful treat!
