This chicken & mushroom pasta recipe is what dreams are made of!! soo creamy & oh sooo cheesy!! This is a very easy & delicious white sauce chicken pasta recipe. Also know as Chicken Alfredo, this recipe does not use all purpose flour to make the sauce. This is my version of the very famous chicken & mushroom Alfredo ! CHICKEN & MUSHROOM PASTA INGREDIENTS : • Pasta – 200 gms • Salt • Boiling water • Olive oil – 1 tbsp • Chicken – 200 gms thinly sliced • Salt – ½ tsp • Pepper – ½ tsp • Olive oil for frying chicken – 2 tbsp • Butter – 1 tbsp • Garlic – 4-5 bulbs chopped • Onion – 1 small chopped • Mushrooms – 150 gms • Salt – to taste • Pepper – ½ tsp • Cream – 1.5 cups • Chilli flakes – 1 tsp • Mixed herbs – 1 tsp • Parmesan cheese (or your choice of cheese) – 3/4th cup or 50 gms METHOD : COOKING PASTA: • Cook the pasta in a pot of salted boiling water . Follow the instructions on your packet of pasta for an accurate cooking time. • Take out a cup of pasta water just before straining the pasta and then strain pasta. • This pasta water can be used at the end, if needed, if the sauce gets too thick. COOKING CHICKEN: • Sprinkle the chicken with salt, pepper & mix. • Keep a large pan over high heat & pour olive oil. • Add chicken & spread it out. • Cook on one side till the edges start to turn white. Flip and cook on the other side for 1 minute. • Remove chicken onto a plate & keep it aside. CREAMY SAUCE : • Turn down heat to medium. In the same pan, melt butter. • Saute garlic for 30 seconds. Next add in the chopped onions and cook till translucent. • Add mushrooms and sauté till brown. • Once the mushrooms turn brown, add cream, cheese, chilli flakes & mixed herbs. • Simmer for 3-4 minutes, stirring in between, until the cream thickens • Add cooked chicken, pasta & toss around for 2 minutes or until the sauce thickens & coats the pasta. • Note – Use the leftover pasta water if the pasta gets too thick at the end. • Serve hot with grated parmesan or your choice of cheese!
