Cook the pasta: Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve some pasta water before draining. 2. Make the sauce: In a large skillet, melt the butter over medium heat. Add garlic and sauté for 30–45 seconds until fragrant but not browned. 3. Add cream: Pour in the heavy cream and stir. Bring to a gentle simmer and cook for 2–3 minutes until slightly thickened. 4. Season: Add salt, black pepper, and Italian seasoning. 5. Add cheeses: Lower the heat to medium-low. Gradually stir in Parmesan and Pecorino Romano until melted and smooth. If the sauce thickens too much, loosen with a small splash of reserved pasta water. 6. Combine with pasta: Add the cooked fettuccine to the pan and toss until evenly coated. Add more pasta water as needed to reach your desired consistency. 7. Finish and serve: Sprinkle with fresh parsley and a little extra cheese on top. Serve immediately while warm and creamy.
