Beef Cheek Tacos

Beef Cheek Tacos can be fall apart tender or crispy like pork carnitas. In this recipe I show you how to make them fall apart tender with crispy edges for a nice texture. Beef cheeks are fairly inexpensive, but full of flavor. They can be a real treat, but only if you cook them right. Check out my method on the Weber Kettle. Cucumber Salsa Recipe: 2 Cucumbers 1 Tomato Juice from 1 lime 1/2 cup of cilantro Salt and Pepper to taste Braising Liquid: 1 Cup Water 3 New Mexico Chiles 1 clove crushed garlic 1 1/2 tsp Cumin Chop the cucumbers and tomatoes into 1/4 inch pieces. Loosely chop the cilantro (or coriander if that is what you call it ;) ) Add the juice of one lime and then add a bit of salt and pepper to taste. Serve immediately. This recipe has a freshness that cuts through the richness of the beef cheeks and I prefer it over other salsas in this dish.
